So, is there anything I can do?
Well, Japan just spammed Missionaries and Apostles at me and now all my cities are converted to Buddhism. I did start Taoism if for no other reason that I like deciding what religion I follow. (As an agnostic I'd prefer none. Let other people worry about which deity, Allah to Zeus, is going to punish them in the next life.) Plus I prefer to have beliefs that I choose. I don't need beliefs supporting a Religious victory is I'm going for Science and Culture.

Am I Buddhist now? Or is there some strategy I can follow to get Taoism back?

If all of your cities are converted and you don't already have any religious units that can change them back, no, there's nothing you can do to change it back.

Thanks. I guess I can tear down those religious districts and put something useful on them.

Faith can still be used to patronize great people, purchase the religious building of the religion (and potentially some other buildings or units, depending on the beliefs), and later on is used to buy Naturalists.
Also you can't destroy existing districts anyway.

Don't forget that if you build the Grand Master's Chapel, you can use your faith to buy troops.

Make Japan regret their decision by becoming crazed fundamentalist Buddhists, and claiming the holy land!

LOL!

Japan followed that up with sailing a settler across the ocean, marching it to the edge of my civ, and founding a city there.

I decided, "That's enough out of you!" and took it from them. They ceded it to me during the peace negotiations.

Didn't make any difference. I'm now denounced as a warmonger by every other civilization. A first for me. There should be an achievement for it.

They denounced you, but the reason cited is because that behavior netted the most influential negative value. If a little 15 or 20 point hit broke the camel's back, you haven't done much to improve relations through the earlier part of the game. Don't worry, if you don't take more cities, or if you do take cities and liberate them, the warmonger penalty will decay.

Well, no^^
The people are deciding themselve, which religion they're following. You as a leader of a civilization might want to have taoism as your main religion, but after all you have no choice but to convince the people through apostles and missionaries or you can also engrave it into their minds with inquisitors.

And then there's always the option to wage war against the civilization sending you all their religious troops, as your military troops can kill pretty fast.

Especially useful if they send a Debater or two to you and you don't have any. You're going to have a rough time fighting those with religious units, but your military will happily murder them with no difficulty.

Better to use faith points constructively than tear down religious buildings and lose all production, science, housing etc. perks. Though I never play for religious victories, the perks allow me to compete with other Civs on immortal level. Plus, being able to snatch game-changing engineers, scientists and merchants with faith points is a huge benefit.

why not put a few religious units, especially apostles, on the cities/routes the enemy ones iwll take?

remember you get a bonus on religious fights in territory of cities following your religion, ESPECIALLY if on your own holy sites
so if you put a holy site on a road they will take, or directly in front of your city, the enemy religious units will automatically encounter your guys, almost always engage in religious fight and suffer penalties

also if your units are on holy sites, they will heal automatically ;)

I use this system to channel and screw them up

and ALWAYS have an inquisitor in your holy city!!

There is a way to get Taoism back in your cities. You need to kill their religious units near your cities. If you reduce their influence enough (And still have some Taoism influence in your cities) you can get them to flop back. Just wait til a bunch are in your territory, declare war and then murder them all with military units.

I'll have to remember that. Thanks.

Especially since I'm becoming resigned to being a warmonger.

Turn off religious victory or deal with endless religious unit spam. Its that simple.

yeah, religious and culture victory sucks anyway: Science or Domination only! ;)

why science? because he who controls the orbitals, can drop rocks on yer frikkin head!
RODS FROM THE GODS, BABY! :p
There sort of a way to get your religion back but it's tricky. Assuming you don't have any religious units following Toaism. Do any of your cities with a holy site still have some Toaism followers? If so you need to be at war with your city's majority religion. Whenever they send a missionary or apostle use the condem the heretic action on your military units. If you do this enough you will lower the influence of thier religion which will hopefully turn that city's majority religion back into Toaism. Once you have one city reconverted, it should be an easy task to purchase Inquisitors and apostles to restrore the rest of your cities.
