I want shorter game time
I feel that 2-3 hours is the perfect time for an evening game of Civ. If it takes longer then it means that I have to save and come back to finish it another day, but then I've already forgotten my strategies and it doesn't feel as fun anymore.

I've found that scenarios work well for this but I wish I could play the main game instead.

Any tips and recommendations for how to achieve that? Maybe advanced settings or mods?

Change the game speed to "online". That will cut the length of the game about in half. If the result is still too long, then under advanced setup you can choose to start in a later era. You can also change turn limit to "custom" and set a lower number of turns for the game. Using one or both of those options should allow you to fine-tune the length of your games to fit the time frame you prefer.

I'm new, took watching a long how to play video and had to start three times to get the hang of it.

I've been playing on standard map size and this time it's going for three days, I though I was close but found I have a long way to go. I'm OK with it being long, much longer than expected.

My problem is I'm starting to loose after so much time, I guess I could go back to an older save, but don't want to....... I may take several days off and start over with more knowladge.

Just to follow up on this. If I'm starting in Information Era and playing on Quick game speed then a normal game will take around three hours until the timer runs out.
