They refresh trade range, so if you can only go 20 spaces, but you have a trading post at 12, you can go 32 spaces instead. I think Rome also gets extra gold for traders that pass through a trading post.

According to the civilopedia, trading posts in foreign cities give +1 gold no matter which civ you play, and Rome gets +1 gold for trading posts in domestic cities too.
Traders have a max distance of 15 tiles on land and 30 tiles on water. Every time your trader goes through a trading post it resets the distance allowing it to go another 15/30 tiles. It's also worth noting that a trader can only transition from land to sea through a city center or harbor.
