I'd disable Barbarians in set-up also
He wants to learn the Civ growing part of the game first. He can then learn the warfare part of the game with units and movement and range and melee and all that, when he wants to.
That's all he means.
There may be a mod now to adjust the start distance. I did it manually by editing game files directly. There was a post on how to do it.
Mods are not working right now, due to a Civillization pack update
I think you would get a better experience with at least a couple other civs on the map though. Maybe try a standard size map with 2 other civs. With only 2 civs there shouldnt be much of an issue but at some point you will interact with them to get a little taste of that part of the game without it being overwhelming.
Also, there are a ton of vids on youtube. You may want to take a little time to check out a couple of those.
The game also provides a tutorial that /should/ get you up to speed. I have no idea, I've never played with it.

If all that isn't enough, then perhaps the following steps on game set up:
Pick whichever Civ you like the best.
Set the difficulty to Settler (should be the easiest).
Set the map type to one with islands.
Set the map size to small.
Then click Advanced Setup:
Here you can choose other civs for the AI. You can pick whomever, but some are notoriously more aggressive than others. This shouldn't be an issue on Settler Difficulty. And you can reduce them to have only one other AI in the game.
On the right hand side of the menu you can toggle off the barbarians (source of early game frustration until you learn it).
You might also want to set your starting resources to Legendary Start. And the overall resources to Abundant. This will help you get used to upgrading these tiles as you see them.
This setup should provide an easy coast into the game. Also, keep the advisor around until she's redundant.
I don't say that to be jerk...but you know, it's true that it's only a VIDEO GAME...
if a game is only 1 hour long, then that is a valid criticism. this game takes 10, and to lose because of a bad ui or obtuse game mechanics, that of course is a negative and discouraging

It's ridiculous to see that people can't even take losing in a single player game.
It's like refusing to accept that you are expected to fall down when learning to walk/run/ride a bike; just ask your parent or when your kid say such to you, you'd laugh back.
You'd be surprised how much you learn through losing though. You have to be a loser before being a winner.
Thing is without the ai you'll just be under an illusion you're playing well when you're probably not playing well at all.
Cheiften would still create that illusion.
You are making a judgement on the OP's character. Not answering his question. Pointless.
I actually did that for one game, after 10 games and never seeing Germany or France in any of them, and that way I was able to see them both lol. On the other hand the game ended up being very uninteresting and tedious.
Of course that could be false information, or they could have fixed that with this patch. Think I only ran that difficulty level once to get the achievement and moved on. Didn't notice anything, but probably wasn't thinking of paying much attention to the AI at that level.
