If you use the war carts as a deterrent early on, you can then pursue a Science victory with ease.
Gilgamesh is perfect for warmongering towards a Science Victory... Plus the Ziggurats of course but you will most likely find working mines more important at all times.
If you're not keen on war then I would say Arabia is probably the better bet with their bonuses to Science production. The Madrassa is also a better University.
Aztecs are also a great choice if you can get them. You can spam cities and rush campus districts with builders.
Germany's unique district and imperial cities allow you to build more districts faster which is great for any victory.
The last two are extremely versatile with any winning condition and are prime canidates for dominating opponents.

As Gilgamesh I never build Zigs, instead I conquer one continent, leave an area unsettled for barbarian camp spawns to get the goodie-hut boost.
and even moreso to piggyback off my last post whether or not it's hard or easy if that's what you want to do why not just try it? there must be something i'm missing. hell even if the consensus was that gilgamesh is the worst at getting a science victory, wouldn't it be fun to try anyways? what's the worst that could happen? you lose?

Why wouldn't you build Ziggurats?! They're awesome. I Ziggurat spam along rivers (flatland). Not only do they give you extra culture but you get tourism from them in the late game. Even though you may not be pursuing a culture victory you need enough to prevent the AI winning with culture.
Also if you see from the screen I eliminated France and The Aztecs. That left a lot of room for barbs to spawn, but eventually on an Earth map CSs and AI will take the land as it is sparse

If you work Ziggurats you can't work mines. And production is king in Civ 6. It's an opportunity cost thing.
I'd much rather get extra science working campus projects and get the overpowered great Scientists.
Plus land adjacent to rivers are perfect for Lumber Mills which really help with Cities low on hill tiles.
