Am currently playing a large Island Plates map that is essentially two huge landmasses, one with a giant inland sea.
The first gives you more options on map types (small continents being my favourite) and the second gives two bigger map sizes.
I know those mods are on Civfanatics, can't check right now if they're on workshop (I'm not close to my pc).
Hope that helps.
i would try shuffle, with legendary start. i think you might be surprised at how some of the maps turn out. i find that most of the time, the world generated is balanced with decent land mass as well ocean area.
all the best.

See if that's more what you want.
=)
it's bit sad that SDK came out so late that good mods have gone elsewhere... hope firaxis takes a note and learns from their grave mistake. (not holding my breath on that)
