Searching for similar games
I love Fable, Trine and Medievil 1 (from the PS1 experience) due a non realist medieval/fantasy theme and having a simple progression (not a large skill tree nor a open world with fully generic side quests).
I miss something new like these titles. Skyrim, Darksouls and Dragon Age I don't feel the same energy. Any recommendation?

Kingdoms of Amalur maybe? Easy to follow, fun combat. Not overly complicated

That's probably the closest one.
I would add GreedFall (levelling and location design), Tyranny (world changes based on the choices), Dragon's Dogma, and possibly Dark Souls (location design).

Did you even read OP? About Dark Souls he mentioned:

nor a open world
Tyranny is not even close to being similar, it is party based CRPG.

Haven't played GreedFall, but I assume it doesn't fit too.

I read "Darksouls" as "Darksiders' (this one - https://store.steampowered.com/app/462780/Darksiders_Warmastered_Edition/) and would agree that beyond the visual style they are not similar. Apologies.

Tyranny has a simple skill system, small locations, the world changes depending on the player's choice, the setting is fantasy, and the visuals have a similar style. There's no morality system or sandbox elements, though.

Dragon's Dogma has a small relatively open world (most "locations" about the same size as in Fable), a classic fantasy setting, straightforward class system, and it is an action-RPG.

GreedFall has 3 short skill trees, the map is divided into locations, the setting is fantasy, though not medieval, and it is an action-RPG.

Edit. Forgot Venetica. Can't quite remember the skill system, but the location design and narrative style were similar to Fable.

Bound by Flame is an action-RPG in a dark fantasy setting and the protagonist's appearance changes like in Fable, though only towards evil. The most viable skill tree is the dagger one.

As some ppl said, Kingdoms of Amalur and Overlord games are pretty similar. Loved KOA, pretty charming game with a cool combat system (you can mix them all)

Also this one

A simple RPG with a lot of swearing and dumb jokes. its pretty fun, from the same ppl who made Greedfall i guess.

Darksiders have a modern world theme. Anyway I loved this game due the mechanics while Darksiders 2 I think was too many online RPG elements.
Loot, craft, skill tree in excess for any single player game is too generic features for me. For some reason Fable have a limited RPG features that not turn boring or an wasting time feeling.
I understand people that enjoy modern features but I always will prefer simple mechanics.
