The containers with NOT A LOT of stuff contain processed materials that you can use at once.

For example the FOBs are all on different sources of water, with different sources of resources to mine, which will add to the total UNprocessed resources, if I'm not mistaken, then undergo automatic processing along with other resources you grab in the field.
The icons of resources on the map that Quiet can find, however, are different. These containers, or more so cases, of resources are only about 100 a piece, but will instantly be available for use on the base, or in other words come already processed. These are more for active "mining," where the player will go out and collect the resources needed for MB. These will usually be more important to gather early on compared to the large containers, as you can usually locate these on the map, and a marker will then show it's location and whether it's regenerated anytime the area is in play.
As for the amount of Raw materials in each large shipping container, I have noticed that it could be possible that Red containers carry larger quantities of raw materials, but are usually rarer to find and are usually heavily guarded.
Okay, here's what I dug up, the tiny white containers that you pick up without fulton, are obviously processed mats.
White cargo containers contain UNPROCESSED materials, lift one up, you'll see it showing up on a right side of resource chart. They contain small amounts of unprocessed resources, 50 PM, 400 MM and 750 of everything else
Red cargo containers contain UNPROCESSED materials, but they have 10 times more of what white ones can offer. 500 of PM, 4000 of MM and 7500 of everything else. They are a little less common, especially the ones with precious metal in it. There are two at the end of OKB zero, if you are interested.
I also saw some weird white container that didn't look like the others, but I don't have much info on that
