mgs4 is only available on ps3. it can be emulated but i don't recommend it because it is a movie. not a game. watch it
mgs3 is preferable but it is an old game. it is half movie and half game. play new one if money not problem.
mgs2 melts your brain but the gameplay may seem old. better mechanics. meta 97
mgs is very old. but i think it is the best mgs game. graphics are 240p. maybe even lower. meta 98
pixel games stories will surprise you. definitely don't skip it.
my personal advice is according to the release order
Maybe I will just play it in order after all. I will have to decide which 3 to play.
play that, maybe emulate peace walker, then play ground zero THEN MGSV....thats big bosses story.
everything after that is solid snakes story, which is clasing MGS/mgs2/mgs4

MGS vol1 got 7 MGS game and it's on sale right now, you have :

Metal Gear Solid (Including VR Missions/Special Missions)
Metal Gear Solid 2: Sons of Liberty (HD Collection version)
Metal Gear Solid 3: Snake Eater (HD Collection version)

You could play the NES versions a bit to get that old feel, then play MSX versions (I liked them) and then you play MGS 1 2 & 3 in that order OR you can try to play it in story order but that would be difficult.
With everything we have on steam the story order right now is: MGS 3 ---> MGS5 ----> MSX versions ---> MGS 1 ----> MGS 2
But you would still miss some games as it's not complete on steam.
Otherwise there are also 2 spin-off you can find on steam: Metal gear reveangance and Metal gear Survive. One is an action game beat them all style and the other one is a survival base building type of game with end game co-op with similar controls to MGS5 and it spoil a bit MGS5 GZ (the beginning of MGS5).
Otherwise if you really don't want to play old games it's as someone said: MGS DELTA, it's a remake of MGS but storywise it's the first MGS game.
