Then it went up to about a 7. Haven't gotten 100% yet actually, but I'm at 94%, finishing [Extreme} Quiet Exit tasks and getting all the animals are all I have left. I've heard parasite armor is the way to go, so I'll try it next, but ♥♥♥♥♥♥♥♥, does that ONE mission make life harder.
That and the Extreme boss fight against Quiet. It isn't all that hard, it's just getting the task to beat her without using firearms requires more creativity than the non extreme version.
So far I finished everything except for mission tasks, which I'm doing at a slow pace. Got 93%, so the remaining 7% are just mission tasks.
I've only been on 2 difficult missions. The first is A Quiet Exit of course, that mission is just set up horribly. Worse is that I had entirely the wrong gear loadout for that mission when I got stuck in it, and it took me awhile to figure out that I could piecemeal supply drop in a proper loadout. Forcing you to be stuck in that mission without being able to return to the ACC is mind bogglingly dumb.
The other mission I had an issue with more recently was [Extreme] Sahelanthropus when I used a not-Snake character. Kept getting OHKOed by the dumb unavoidable sword rock attacks. Otherwise with Snake + Medical Prosthetic upgrades + Bandana the mission is very easy.
I do think some of the missions in this game are hard when you don't know the best approach, and if you're staying non-lethal. One of the good things is the game doesn't 'hand-hold' too much like some other games. Like the Metal Gear boss, a lot of other games would have had big flashing icons saying {SHOOT HERE] rather than having you figure it out yourself.
As for animals, yes it is a PITA. I am doing that now, I have 5 rare animals still to collect. That aspect would have been much more interesting if all animals you could collect were actual models in the game. Like the Gerbil or the birds. How cool would it be to be sneaking through a tunnel at OKB only to realise there is a Mamba right next to you that could bite you if you get too close.

I'm currently at 89% and have no plan on going any further. All missions are complete, all items are acquired, same goes for all side ops. The only thing left are animals and side-objectives of the various missions.
