The game is definitely worth getting. MGS 1,2,3 focused heavily on stealth. I haven't played MGS4. MGS 5 let's you take different routes (as in you can use large explosive weapons to destroy targets, snipe from far away, or capture targets) to finish the mission but stealth still is the best and most rewarding way. You're just going to have to buy, play a demo, or take advantage of Steam's return policy. You can play a certain number of hours, if you don't like the game, you can ask for a refund. No questions asked.
Also has one of the best AIs I've seen in a long time. The enemies aren't too easy, aren't too cheap - just somewhere in the middle.

Also about your open world question, MGS5 is not true open world. Its more like a gigantic map that you can explore, but there is very little to see. It feels more like an open world for the sake of being open world, than a place you'd actually be interested in exploring.
There are outposts to defeat and capture, but they offer little challenge and will probably bore you quickly. You can also visit the areas where your main missions take place in the open world, but there is little point to doing so as you may as well just play the actual mission at that point.
This game imo is best played mission by mission, never leaving the "ACC" (Which is your helicopter that Snake stays in when you're afk.)

the reason why this was done was to not "force" gamers to watch hrs of people talking in cut-scenes. MGS4 was criticised for having gamers spend their time watching people talk excessively. MGS4 has a about 8 hrs worth of dialogue. MGSV on the other hand allows you to game while you listen to portions of the story.

yes and no. only if you play it the same way and skip listening to the tapes. then it's just runing around a map. you can play using only a tranquilizer gun, semi-automatic, rocket launcher, hand to hand, or just explosives, so that's 5 ways to play it.
beyond that, i think you mean more "depth" and "purpose" to the maps you play in. other than just doing the objectives. and yeah it sucks you don't have much depth in the maps.
The game is only repetitive if you're going for 100% compltetion. You can complete the storyline without doing the same mission twice. I've personally done it on my 2nd acct.
Despite all of the bad, MGS V is a superb experience when it works (ie not when facing down a bat-crazy boss) and yes, I think it's definitely worth getting. The Ground Zero prequel is fabulous too (almost better then the main game, in fact).
