I'd advise you to at least watch a playthrough for just a little and maybe you'll be inspired to play them yourself. Then get the story synopsis somewhere else if you're not convinced.
Once finished, when I will start MGS I would not be jettisoned by this so-called lack of information (if it exists ?) in relation to its summary

Kojima didn't have neither the big picture nor the ability to tell story like today. And you won't feel the same as MGSV. The first two are focusing more on the stealth mechanism rather than story. (In you words, still playable). Like mario games, you will never care about the story, but still fun to jump around.One of the charm of MGSV is that he actually connect the story back to the beginning, and solve the greatest BUG in his early year storytelling: Why you can kill Big Boss Twice.In my perspective, MGSV is proof of MSX MGs' lame storytelling.
Well, if you are there for the story, it's totally not worthy.You can still catch up MGS easily.
But to feel the perfection of those Kojima games and those good old days of gaming.
Play it.
I haven't played the second game yet but I heard that game resembles much closer to the later Metal Gear games and people have stated that it's one of their favourite 8-bit games so perhaps you should at least give that one a shot if you can.
Otherwise, Metal Gear Solid will contain synopses for both games that you can read.
There can be times where you may be missing an important item that is hidden somewhere obscure.
And whatever you do, avoid killing any prisoners or the final boss will be undefeatable.
It should be pretty simple to not let that happen unless you encounter a boss named Dirty/Coward Duck who has three hostages that can lose your rank if you accidentally shoot them.
