Some things to note:
There is uninfected wildlife on the island. If one doesn't mind eating crows and rats, there's a supply of food.
The infection isn't fatal. The Afflicted are still alive and were driven insane from the torture, not from the virus. Natalia is an example, her mutation had already started when Claire and Moira first saw her, but she never turned into a monster even six months later.
The Overseer might be trying to restart Project W. In that case, the Overseer doesn't want Claire and Moira to die and is looking to recapture them after the virus has started to mature. She wanted them to escape the prison so that they could go to the Wossek after all. Additionally, six months is how long Sherry and Jake were held captive by the J'avo in RE6. If they were captured a second time, they could still be alive.
The Afflicted are intentionally confined to the prison, and the only enemies encountered outside of it were the Revenants, six months later. It's possible that large portions of the island are actually safe during Claire and Moira's time there.
Edit: Forgot to mention, it's likely that at least some of the TERRASAVE employees seen in the episode 2 trailers will actually escape the island. I say that because Barry knew what the situation on the island was before he got there ("These must be the infected that the briefing was talking about..."), so someone managed to send word of what was happening on the island.
Basically this, Capcom will hire another voice actress before they kill off one of their main characters specially when they have so many suckers lined up to buy a RE2 remake. The worse they'd do to Clair is give her the RE5 Jill treatement, remake her because of plot then charge us to get her original skin back through DLC.
Resident Evil Revelations 2 is set between the events of Resident Evil 5 and 6.

Moira's Extra Episode actually has her hunting for wild animals together with an old man. So yes, she and Claire could have survived on the island Survivor-style. If I had to guess, Claire is injured, which is why Moira's doing the hunting.
Her bracelet is solid red and she can see through walls.
She's a mutant.
