Resident Evil (Remake), RE:Zero (despite it being a prequel it was released after RE1 and will spoil that game), RE2, RE3, Code Veronica, RE4, Revelations, RE5, Revelations 2, RE6, RE7 and then RE8.
Then there are a number of spin-offs like Outbreak 1 and 2 which take place in the same period as RE2/3, there's the three Survivor games which are first-person shooters, the Umbrella and Darkside Chronicles lightshooter games on Wii which mostly recap previous games along with new stories. You can avoid Umbrella Corps and make up your own mind on Operation Raccoon City.
The remake of RE1 is pretty much the same game as the original while having been rebuilt from scratch with additional content.
As for RE2 and RE3 I would say go and play the originals first if you can. The remakes are good but they don't beat the old ones for me.
I appreciate it, and I'm focused on the main games, I'm ok with skipping spinoffs, or whatever isn't on Steam.
