That main menu was created long before Exodus canon and was based on the original menu (Artyom, writing the story of 2033 after it happened) but now with context of the Last Light good ending where Artyom and Anna get married.

But... 4aGame creating Metro with Dmytri Ghlyhovsky (writer of Metro 2033). So... They know bigger than we are.

The first game is the only one that tries to stick with the canon of the book, with redux they basically threw that out and said canon for the games is separate (without changing the story). With this, we can presume that after LL Atryom and Anna will have a child.

Then a couple years later, they started story boarding Exodus with Glukhovsky writing 2035. So in terms of Exodus, 2033's main menu (original and Redux) is not canon because they never had a child and Artyom is not an old man writing a book in the Metro. Though all of this is speculative as there really is not confirmation that the kid in menu is indeed theirs.
