An easter egg is a secret put by a developer that people have to find and is usually well hidden, the elevators going crazy isn't hidden at all: you clearly see it happening and isn't hidden, it's only relatively rare...
So yeh, it's a random event, not an easter egg.
The little Boneloaf that spawns in Grind could KINDA be considered an easter egg tho, even if it still isn't hidden but at least it's hard to reach and really unusual...
Each level is eventually supposed to have it's own way of ending itself if players are taking too long, and, currently from my understanding - The elevator event is random at the moment (from what I assume)
I'm still awaiting this event to happen to me when I play elevators, it hasn't ever happened to me yet, and I play all the maps pretty evenly...
