Yes the shift button is to ''Lift'' but it never seems to actually lift people. I have lots of trouble grabbing someone who is unconscious and when I manage to, lift doesn't pull them off the ground. Then there is an obvious struggle when they're awake.
Beyond that, think about momentum and where your handholds are. The best but hardest way to grab someone is by the shoulder and hip but you can make most grabs work. Most grabs will be on the chest and back and you arent going to lift them much higher than your head like that but you can spin for momentum. That also helps deal with their struggling.
You can grab conscious opponents but either grab and throw using the momentum of lift or spinning or grab them in a way their arms and head cant hit you easy. You dont want to be holding a conscious opponent for long even if theyre struggling to hit you at the moment.
If youre having trouble near edges and getting grabbed, grab back and hold A (jump) and B (headbutt) to lift yourself into a handstand, useful for flipping over their shoulder to escape or climbing ledges like to escape the subway rails. Do it fast and use the momentum to propel yourself far away since youre putting your head undefended at perfect punching height.
Also you used the word hoist in your post so just to clarify A (jump/sprint/hoist) button is used to hoist you own body, not what you are holding. Y (lift) button is the one you want for lifting what you are holding.
I'm using a keyboard and I've imagined a controller would make this game a lot easier, but I wouldn't know the first think about trying to use a controller with my computer. There is also no headbutt button, just left punch, right punch and kick, but kick is so out of the way to press.
