I personally do not like Sabacc and am bad at it, but a shift token like "Immunity" (you can get 2 of those) can make it a bit easier. I would say, try some different combinations of shift tokens? Maybe try Exhaustion, or Direct Transaction. And use double draw to get the better cards.
Becoming good at Sabacc will allow you to win many very valuable prizes throughout the game so I'd recommend brushing up on it at least a little.
You can turn off the 'quicktime events' for all the Cheats in Sabacc, so you simply succeed or fail (at the cheats) based on the game rolling randomly, but I found that the game failed more often than I did so I turned them back on.
As for the basics:
Your goal is to get the lowest pair you can - 1s or 2s, or paired wild cards for the best hand. That said, any pair is better than not having a pair.
If you can't get a pair, keep the difference between the two cards as low as possible. You lose 1 chip for every number between the two cards (so if you lay down a 2 and 5 you lose 3 chips).
One of the special cards you can draw allows you to roll its value randomly at the end of the hand. If you don't have a pair, that is almost always a good gamble - especially if you can't keep the difference between your cards down to 1 - but it is a gamble so be careful.
Remember that each color card draws from its color deck/discard pile. I accidentally sabotaged myself by not paying attention to the color of the cards once or twice.
Never draw in the first round unless:
A) You can see that drawing will make your hand better (as in, there's a wild card or a pair you can get with the draw)
or
B) You are the last person drawing that round and such a card has been revealed.
Because the other players will unearth useful cards as they draw and discard - often one of them will drop or reveal a card useful to you.
Use your Tokens if you are doing poorly but it is always best to save them until 1 or 2 of the other players have dropped out. Tokens are very important in late game when few people have them and everyone is low on points.
The opponents will also spend Tokens so pay attention to what they do - if they have an ongoing effect, it will be posted up in the corner of the screen.
Watch the other players, they all have 'tells' until you get to the hardest matches.
If you are sure you're going to win a hand, do not use the Token to regain your lost chips from this round - winning will return them to you. Do use that Token any other time you drop to 1 chip.
You can use Cheats 1/match without much fear - more often increases your chance of getting caught.
Addendum: In those first, very tutorial matches, drawing the first round is often good because the game has weighed the draw in your favor. That's only the case in the very easy matches, though.
In the settings - in the gameplay area I imagine but I'm not looking right now - you have the option to turn off the minigame and QuickTime events for Sabacc and/or lockpicking.
It will make the game a little easier when you use Cheats - like having Nix spy on the other players' hands - but it won't win the game for you. Follow the advice I offered above and if that isn't enough look up a Youtube walkthrough.
