How to reset all settings to default?

I set up the gameplay and I don’t like it, but how can I reset it?

I forgot the exact subfolder, but there is a settings file somewhere in your user folder; delete it(or better, rename it in case it's wrong file so you can revert it back if necessary), and the game should create a fresh one with the default values.

the problem is that there are at least 3 similar folders, the first one is in the game folder 2 in appdata 3 in the documents

Go to the one that the game launcher opens when you click the button to go to your user folder, that should be the one. If it shows multiple versions, the current version of the game should be the one that counts.

after uninstalling the game breaks, 90% of the interface functions disappear

Sounds like you deleted the wrong file, revert back to what you had before and look for a different settings file.

Looking at my install, it seems the file is probably settings.json inside the settings folder in your BeamNG user folder
