Like I said the camera is garbage but you get used to it, in my opinion this isn't an extremely fun game. It has its physics which makes it different but still on an empty map the length of your entertainment is left to your imagination.
I started playing beamng multiplayer. Its super easy to do, just one download you can probably get it done in like 30 seconds. Never played courses before but a few times n they werent empty but still boring none the less.
In my opinion this game is overrated, but thats probably a very biased opinion considering I've always knew what it was since it was a super crappy demo years ago and besides modding it hasn't really changed much from then.
That being said it is still very open and directionless. Making the most out of this game requires creativity, experimentation, exploration and skill.
Playing with a wheel is strongly recommended although I admit that setting up your controller can be confusing in this game. See here for more details:
https://documentation.beamng.com/support/hardware/
In your case, it's possible that you will have to mess with the "1:1 behaviour" and "Linearity" settings of the "FORCE FEEDBACK" section in the "CONTROL" options. Not sure what type of controller you are using though. Someone else could potentially assist you further here.
As for the camera, you can adjust how tightly the camera remains in place behind your vehicle by decreasing the value for the "Follow vehicle direction" setting in the "CAMERA" options menu. If you want to get completely rid of any issues with the movement of your camera, you can play with the hood and driver views. I switched to interior views 15 years ago and never looked back.
I mean she does okay here:

Not to mention she is a British rally driver competing in the WRC.
awesome young driver
step 1: don't play on a mouse and keyboard, get yourself at least a gamepad
step 2: understand that you can't take a 90 degree corner in a sports car while going 60 km/h, fully throttling and steering as much as it's possible
step 3: just give this game a time, it's hard, but hella fun and rewardable
As an physics experiment I think its interesting, but as someone with little imagination i'm a little lost with what to actually do
*edit*
So I just started doing a delivery challenge thing, quite enjoying it actually, its been a long time since i've tried this, I don't remember having traffic, although I think enjoyment depends on what your expecting,
I'm hopeful a carer mode will give it some more structure
