I've also driven a real vehicle just shy of 20 years.
It's realistic. If you ham on the brakes, throttle, full steer one way or another the car is going to 'wig out' and lose control as it's overcome by simple laws of physics/motion.
Remember, a car is this thousands-of-pounds thing in weight, not the 5lb toy racer that NFS taught you.
It's actually gotten considerably better on 0.13 game version and a little better yet on 0.14.
I used to have a harder time controlling with a keyboard - which I've always played with - I've even played with a genuine SNES controller (I'm no good with those analog ones), and it's much easier now VS what it was even one year ago.
If you only have a mouse and keyboard, find an automatic 4cylinder car, and don't go over 65 with it until you get used to it. If the car starts to spin out, lay off the controls for a second (if using the keyboard) and the car (somewhat like in real life) will generally point the way momentum (and gravity to a point) is/are trying to take it.
Example:
Sliding sideways IRL in 2 inches of snow on the roads (snow stuck), at 25mph, releasing the wheel and then applying gentle throttle to paw the vehicle forward (front wheel drive) INSTANTLY - like a finger snap - stopped the skid and resumed intended travel direction. That was in a 3650lbs front-wheel-drive vehicle, with un-treated snowy roads with current heavy snowfall. No winter tires etc, just your average hum-drum boring sedan you'd expect to find in a rental car lot.
So here, taking the fingers off the keyboard to let the car straighten out works. Don't practice on public roads with my advice in the real world though; find an empty off-hours parking-lot to practice in and don't hit any light poles.
An analog control will be more precise than the 1/0 input of a keyboard (on or off completely), but if you can hit buttons quickly (the old turbo-thumb from the NES days), repeatedly tapping keys helps if you don't over-do it, but it's an art. An art that might take 1000 hours to master. A joystick or gamepad might be more reasonable of an expectation here.
The driving is real, very real, more real then you may find elsewhere. In addition to that, other things are being added in, that help make the situation even more realistic all the time. So do check back after the next update if you still feel something is missing.
Or you can give it a break and fill a moving truck with pianos and go off-roading. Such a beautiful chorus of busted pianos. I could just sing to it (and it would still sound better than Chris's Mess muzak).
Yes you do have control with keyboard, but you can't just hold the key down and expect that things will fix themselves you have to tap the keys if you want control over the car.
I have used keyboard in this game a lot, now i can drive much better with keboard then i could with a controller or wheel.
In my opinion the suport for wheel in this game is not that good. It was a litle over a year since i tried it last but then i could barely get the game to work with my wheel.( migth be because i use a g25 and they dont work well with win 10) but i couldnt get the game to sens my clutch pedal or manual shifter.
1 year is quite some time, there has been big changes meanwhile.
Also that issue sounds more like a configuration issue than else.
Most wheels work fine out of the box, but if you have some particular configuration in your Logitech software, then you need to keep an eye on it.

There's not much we can do from our game side to fix that kind of external problems :)
Also, as mentioned, there have been massive improvements to ForceFeedback during the last year, so it's worth giving it a try again :)
