First issue, you're driving too fast for the car and the road. This takes practice because it's hard to gauge speed like you can in a real world car.
Second issue is control sensitivity. BeamNG's control scheme is very direct and linear by default. That not only affects steering, but also throttle and braking. The result is that inputs are amplified in the game, so you're doing the equivalent of big tugs at the steering and deep stabs of the brakes and throttle. All those things have a huge impact on weight transfer and the ability of tires to maintain grip.
Most driving games, like Forza or Gran Turismo, compensate by dampening big inputs but other simulators tend to be fairly unforgiving too. I haven't tried BeamNG with a steering wheel but I hear even that requires a bit of calibration. I've been using an Xbox controller and a couple of weeks in I'm still trying to figure out a good setup.
For example, if you're trying to negotiate a corner at full steering lock, and at full throttle, you're going to understeer off into to the trees, explode and die. This happens both in real life, and Beam, so the issue isn't Beam's handling physics - The issue is the person using said physics.
Using a wheel and an Xbox Elite controller, at the correct speeds and angle I never get understeer. 100% understeer to me is pushing the throttle down, throwing the car back while on full lock which 9/10 it is.
Tip, when the tires squeal, you're pushing hard. Its not GTA.
Do you use a wheel? Because this game is 100% meant to be used with one. Regular cars with normal street tires behave exactly the same when compared to the cars I've owned in real life when pushed to the limit.
I've driven in many different weather conditions, from dry and humid heat to harsh winters with snow and ice, on new tires to really worn down ones. this game does a pretty good job when I compare the feel of certain cars that could be comparable to my irl cars.
