I can indeed turn my IRL vehicles while moving 30 mph, yet in game if I hit 20 mph the car seems to literally refuse to adjust course even slightly. I've owned the game for years and I do not recall the driving physics ever being this awful (Neither with my controller nor with just a keyboard).
You should try looking at the settings. Lots of options and adjustments to improve handling if you don't like how it is by default.
Ease off the steering and allow the car to pitch forward and settle, don't apply throttle until you don't have to take your foot off it again and listen to those tires.
Once you learn to read the car and know what its doing you can belt them around with ease, even without a wheel.
Real cars are not like that. I used to own a 1977 Cadillac Eldorado and she would quite happily go down a fairly curvy backwoods road at 40-50 mph. Meanwhile in this game when I try to go down the road from the default start in Italy that gentle left bend is too tight to make at 70-80 mph. My land yacht Caddy could handle what a rally driver would consider a "4" at speeds this game thinks is too fast for a race car to take a "7."
I don't have any assists that I can see turned on, so no stability control or anything that I can find that would cause that problem.
I don't remember saying that. I DID suggest looking at settings though. Especially if you're using keyboard/mouse.
Pre-configured cars aren't always the best. Look at switching parts like transmissions, diffs and tyres to improve handling.
Did you not read the actual thread? I am speaking trying to take a very gentle left just off the default start in Italy at 80 mph. I'm not talking about trying to do a hairpin at 120.
You're still ranting about not being able to turn, yet you still appear to be ignoring the suggestions.
Have you even checked your steering filters to make sure you don't have the "Limit steering at speed" box checked? That would be a start.
You might try using a different control method, I don't use a PS3 controller so I can't vouch for how good it is but it could be the controller your using, try messing with some settings or just stop playing the game.
No, I did. My point though is I'm practically in the exact same situation as you in that I've played tons of GT and DiRT, as well as using a PS4 controller (which is virtually identical to a PS3 controller) for this game and I've never had an issue with the handling. I even looked at the specific turn you were talking about and that's definitely NOT a turn you can take at 80 mph. It's like a left 3 or 4 so it can be approached at a top speed of about 60-65 mph for an exit speed around 80 mph. You might be able to go A LITTLE faster on that turn if you used the gutter to help you but that's about it.
