how can i get the cars to not lose traction and spin around easily?
I find the cars very difficult to control. Harder for me than other games. I know it is more realistic but the handling is ruining my enjoyment of the game so I really hope I can be suggested some ways to make them turn quick but not do a 360 or slide around so much.

Simple, drive more carefully the games made for the cars to handle like real cars

turn up the gravity.

I was having the same issue. it is like driving on ice ALL the time. my problem was i was trying to use the keyborad and mouse. this is a terrible idea for this game. use a controller!

What do you use to drive?
A controller is highly recommended, or better a wheel.

Driving cars with a keyboard is not ideal, as you cannot modulate the steering and pedals.

I was using a keyboard at the time I made the comment. The gamepad is a bit better but the driving control is still too...realistic for me. I think a steering wheel would make a significant improvement in ease of control but the best results would only come from some added options that change the operation of the game's engine.

Now if anyone wonders why I bothered buying a game that boasted of it's realism, it was the realism in the crashes I wanted not the controls. :)
I'm not a car enthusiast at all; I just like cars that blows up real good and this game does have some good car-mangling action.
Drive a slow 4cyl front wheel drive car, it won't spin as easily, or get a car that ESC (skid control)... that helps boat-loads, a v8 or v6 rear-wheel drive antique will spin constantly.
Newer base-model pessima is a breeze to drive with a keyboard.
Sometimes quick taps of the arrows to take corners is better than mashing ANY input.
You don't mash inputs in a real car going around a corner or starting out in real life, don't do it here. Keyboard is all or nothing, please use controller or wheel for best experience.

Found it! Simple go into vehicle config and turn up the tire psi to max, easy peasy!

Edit; Dammit, turn out I had the gravity up, whelp I tried.

Yeah I was about to say higher psi would only make the car harder to control

Getting more grip is not about turning up the tire pressure.
There are many schemes that explains why it's good/bad to over/under inflate a tire:

I've noticed especially with the FWD cars you don't wanto to be doing wither acceleration or braking at the same time as turning. Do your change of speed before you start cornering.

That said massive understeer is the main problem i have.

For FWD cars braking/accelerating in corner is generally not ideal if you want to drive fast, as you risk loosing grip on your front wheels very easily.
Trail-braking is what you want to do in an FWD car iinstead:

I find the cars do not perform realistically, ive never driven a RWD V8 doing 80 kmph and never had it start to loose grip and spin before turning, does not make sense

What do you use to drive? (Keyboard? Controller?)
And what car are you trying to drive? Some cars have no fancy electronic aids like ESC/TCS/ABS, due their era.

Yes, bindings are fully customizable.

not true, i spent years sim racing both keyboard and steering wheel in my time, the best way to adjust it so you can drive on the keyboard is by decreasing the sensitivity when pushing the accelerate key, this way it offers a smoother acceleration instead of instant, same can be done with the left and right keys to makes the turning less erratic.

sometimes the best way around the problem is by setting the car up differently on the rear to deal with the oversteer in some RWD cars and it wouldn't hurt to turn into the oversteer on acceleration when feathering the control or skipping to a higher gear to prevent wheel spin altogether.

for fwd cars it's far easier with a keyboard user but it can frustrate people using a steering wheel in wondering why it's taking an ice age to turn through the corners. so long as the rear end on a fwd isn't all light on braking, it will be good to use otherwise the car will swap around in a cloud of wheel spin.

anyway. this is the first time i looked at this game as it showed up in steam recommendations. come to see where it is in development.
