Can you confirm if you both have completed the Aranahe Clan'' quest in Kinglor Forest?
We're both advanced as far as we need to be, and I've completed the main game and Sky Breaker.
When they send me invites, I can hold Y to open them, but it brings me to the co-op menu.
My friend also doesn't show up in the friends list in-game, despite being on my friends list in Ubi Connect /and/ I can see them playing the game in Ubi connect.
Your friend, being on PS5, may need PlayStation Plus subscription to play online (non free-to-play games), as it mostly happens in case of Sony's platform.
Do you know if they have it? Do they play co-op sessions with other players and only cannot with you?
Have you tried a co-op session with other PC player?
They definitely have PS plus as we play other games together online just fine without error. Searching for this issue online, there are multiple reddit threads saying this as an issue for crossplay co-op with Avatar. I've even looked into my firewall, but I can promise you and the team that this is not user error

Do you both have the same in-game content? Meaning do you both own either the main game or the game + DLCs? Can you ask your friend if you do not know, please?
I'm not sure, no one else I know owns the game and I actually asked this friend to get it because I wanted to play co-op.
I own the Season Pass and the DLCs that come with it, he does not own neither the season pass nor the DLCs, but we were going to play in the base game area anyways, and it doesn't explain why I can't even see him on my friends list in-game or invite him on top of that, I'd hope
That is odd that you cannot even see each other in the game friends list.
Can you see each other in Ubisoft Connect friends list? Are your statuses set to available?
Did you try sending each other invites from both PCs? You to your friend and him to you?
I can see them online in Ubisoft connect, but not in the in-game lobby. Even when I rig the system to open a chat with them (and then hit the invite from there), they are unable to accept because they need the ubisoft connect app. He does not have a PC, he is on PS5.
The last and probably simplest thing I can think of now, is does your friend have cross-platform play enabled in the game's settings?
Yes, everything is enabled. They can see me in the friends list and they can invite me. But when I accept the invite nothing happens, it just opens the co-op screen. From the looks of others on reddit and across the internet, this is a common issue in crossplay that has been around for about a year

Do I understand it correctly, that your friend can see you and send you an invite, however, you cannot see him and invite him?
It can be an issues with data communication between you and the server / other players.

Additionally, you can check your Internet router's configuration:
• Security level: If set to high or strict, lower it by one step.
• UPnP: Ensure it is enabled.
• IPv6: If your router uses IPv6 by default, switch to IPv4, restart the router, and try the game again.
• Fixed local IP: Assign a fixed local IP for your PC on your router.

It's seemingly fine with PC users but I can't validate it because I don't know anyone with the game on PC, sadly. As for your recommendations:
I've troubleshooted as according to the guide, and before posting here I had already flushed my DNS multiple times just to be sure!
My security level is monitored and I double-checked that my (Norton) Firewall was allowing the app wholly
I'm not sure if I'm reading my information correctly, but it looks like I have IPv4 (address, DNS servers, and default gateway). I do have something called a link-local ipv6 but it doesn't look like any form of IP address I'm familiar with so I'm assuming its some form of IP used in LAN communications with other devices directly.
My DNS server assignment is automatic through DHCP. Should that also not directly integrate with Google's, since it's a pool?
Would you be willing to disable and close completely (including all related processes in the task manager) Norton firewall?
It can still limit some parts of needed traffic.
Maybe the next time I try it? Though I keep sensitive information on this device for both work and personal and I'm quite hesitant to take such a drastic action
