Also, Salt & Sacrifice will probably still scratch the same itch, at least it did for me. The Monster Hunter aspect isn't as pronounced as you might think, it's still a souls-like first and foremost.
There's also Tails of Iron, but its combat is a bit different and much more parry focused. I haven't finished it yet, but I think it's worth taking a look at.
It has deep lore, build variety, exploration, multiple long side quest, rpg-like leveling system, cool art style, souls-like turn-based combat, long playtime, cheap price and low requirement on hardware.
Anyway, I recommend trying out Ender lilies and Unworthy if you like the 2d aspect of S&S. Play dark souls series for 3d experience.
