Some of the magic spells were way too overpowered at first. I think I saw a reddit post that said it was more reasonable now. I'm sure you can still build a character around it.
Daggers can be pretty weak because they simply don't do enough damage against bosses that aren't easy to stunlock. I know people have found various ways to make them work. Don't be afraid to start out with a dagger character. It's super fun in the early game, and you can always switch later. The skill tree is fairly flexible.
Whips lack a varied moveset. You might get a little bored. Up to you.
Everything else is viable from what I understand.
I'll be playing a one- and two-handed sword character. In my 4 or 5 playthroughs I went straight to other weapons instead.
My first playthrough though was a heavy hitter with a sword though. I decided to have my 'dark souls tradition' of playing a specific character live on through this game, lol. Most of the play styles feel pretty satisfying, so I think you'll be happy no matter which class you pick.

My first build was a paladin who dumped everything into shields, heavy armor, swords, and axes. One-handed weapon and shield is by no means the best combination in terms of raw damage potential, and adding another weapon category into your build rapidly inflates your level, which kind of smarts too.
My thinking was, damage types are extremely important - often to the tune of half again to twice as much damage for the same attack power, when you use the right weapon for the job. Blades on the soft ones, bludgeons on the hard ones, and so on. So I'd carry a sword in one loadout, and a mace in the other, and always have the right murder-stick at the push of a button.
Only later did I learn that axes strike a middle ground between the two damage types, having similar effectiveness between both hard and soft targets - less ideal than a sword for the soft targets, but governed by the same skill as the maces, and thus leaving far more room in the build for that good ol' endurance and strength the weapons and armor so sorely need.
If I did it again, I'd probably excise swordsman from that build, even if that does mean giving up greatswords as well.
