Heads up though: Enemies won't always die easily just because it's the next place to go in the game. Enemies, even common ones, are going to become tough and some will take several hits to defeat than what seems normally necessary. Sometimes these enemies are a one fight deal and won't respawn, but there are some tough sons-a-♥♥♥♥♥♥♥ that will respawn, so be prepared.
I don't use parry, I just dodge and attack as needed. the easiest way to kill the knight is to jump over the trap and let him trigger it. Aside from that, you can pull him back into the room before the village and kill him like donatello vs. rocksteady in the first turtles game with the downward jumping attack with the pitchfork.
Hope this helps.
Wow, that brings back memories. I had no idea everybody did that fight the same way. God, that game was hard. I've still never beaten it and it was the fifth game I ever owned after Super Mario Brothers, The Legend of Zelda, Tetris and Dr. Mario.
