If you don't mind it beeing more metroidvania and less souls like you could always check these 3, I enjoyed them a lot, specially Castle in the Darkness:

Well there is nothing quite like this game except the Souls games really but other games I enjoy that you might if you like this one:

Megabyte Punch: You are a robot that aquires parts through levels. Deep custimization and quite fun although a bit short, more like Smash Bros than Dark Souls but still fun.

Abyss Odyssey: Decent Combat and Procedurally developed levels, more geared for short playthroughs as you lose your gear upon death and the levels are randomized meaning if you want short experiences with different variety it's good.

Bastion: Decent Action/RPG with some Souls like mechanics but it's a story driven action rpg but it's good, I only played the demo though.

Cave Story: More Platformer with lite rpg elements, still worth a try.

Volgarr the Viking: Extremely hardcore platform brawel, no rpg elements really except some upgrades you can get but everytime you die you start over. Only recommended if you really like your games extremely punishing.

Shank: Nice beat em up, worth a try if you like action brawlers, also there is Shank 2.

I'll second 'Volgarr the Viking'. It's really tough but excellently crafted.

And 'Castle in the Darkness' is one of my faves.

'Unepic' should get some love, too. Lots of options for character builds, plenty of replay value, fair amount of adult humor. Actually this game has a lot of really unique elements that add quite a bit to the genre, imo. Definitely worth checking out. Oh, and it has online co-op and community made maps.

Agreed, Volgarr and Castle in the Darkness are great! Unepic is ok imo, but I had some issues with the online and the UI and controls just seemed a little too clunky for my taste.

I'll admit the UI was a bit overwhelming at first. It's all about how you manage your hotkeys, honestly. If you can find a system that works for you it's not so bad.

(While i'm here I'll also mention 'You Have to Win the Game'. It's not so much like S&S, but if you like free retro platformers with multiple challenge modes GO GET IT)

The paid version called 'Super Win the Game' ain't bad either, and while were at it with that kind of games Elliot Quest is pretty nice too :)
I'm a huge metroidvania fan. I think most of the ones I know about on steam people already listed. Two I saw missing were Aquaria and Axiom Verge. These two lack the rpg style progression, but the platforming/exploration is all there.
you guys should also check out Ghost 1.0

There's also Odallus, which is more classic castlevania style, but I haven't tried that one.
In fact I am looking for a RPG style with souls combat like games.S&S has both and its 2D which is more fun.

Look into "Pharaonic", which is Souls combat in ancient Egypt, only sidescrolling. Don't think it has platforming, though. It looks kinda meh to me, but the first game by its developer (Ziggurat) is bloody great, so it might be worth looking into.

Then Pharaonic is what you are looking for, as it is a 2.5D action RPG with Dark Souls like combat.

Or maybe Ghost 1.0, as. The combat might not be like Dark Souls, but the bosses have that Dark Souls feel to them in that difficult but fair kind of way. Oh, and this is a 2D Action RPG.
