Regardless if it's really annoying you, the Alchemist is optional. Skip it, come back later.
If you got any weapon buffing consumables, they will greatly increase the amount of damage you take off his health bar.
Also, at half health he speeds up the rate of his attacks and the fight can quickly turn into a dps race.
Most of his attacks count as magic, which is just plain broken in this game. Getting hit by magic stuns and pushes you without giving you i-frames. Meaning a good hefty spam of projectiles can stun lock you to death.
You best strat is to end the fight as quick as you can, to avoid his Phase 2 spell spam. As I already stated, he's weak to all elements, so a bless/stained page or a jug of pitch fire applied to your weapon will got a long way.
Finally, if you're not hurting for gold, you could try hitting up a merchant for a big stack of light vessels or fire pots and just pelting him with those non-stop. Not effeceint, but funny and effective.
