Just as a question - if I leave creed and then come back - will I need to get devotion level again or not?

Unfortunately, your creed devotion does reset, because you publicly denounced your creed and became an apostate. It's not difficult to gain back devotion however, you often find yourself with way too many minor trophy items that you can use to ascend many ranks. The only problematic one I have found is the Heartseeker Nerves. They don't drop often, and there's only about 4 heartseekers in the entire game. Other than that, a short grinding trip should suffice for any devotion level.

if i not wrong you can just buy the pardon with devara on the woods and you can rejoin any creed. I don't know, once i leave a creed i never return XD

It does reset. I used it once to remove stuff from my hotbar.
However, the work quests do not reset until you go the next NG+.
