About the Discount items in the game shop

I've been holding off on using them since I'd want to save 30% off the big ticket items, but have I been wasting stars this whole time?

How do they even work? Do they stack (10+20+30%=60% off)? Are they single use only, or can you buy everything at a discount all at once?

Can't find this info in the manual/guides or other discussions, so some clarification would be nice.

Not sure, I haven't been paying much attention to it as I was leveling up.
They're not single-use only for sure.
Not sure if they stack or not, but if so, I expect them to stack like "5% off, then 10% off that price" rather than "5 + 10 = 15%"

As for star wasting, personally you shouldnt worry about that because you gain stars ridiculously quickly anyway.

I bought the 10% one and it stayed active even after I left the shop and came back... I guess it's permanent? Why doesn't it just automatically buy itself then if there's no reason not to pick it up ASAP?

Once you are able to get the discount you should get it immediately. It is permanent. Also no they do not stack.

Didn't want to waste the coupon thing on a pack of cards or something dumb like that.

It's permanent, but it only discounts card packs, not anything else.

No, it discounts everything in the store. Not just card packs.

Yeah, everything in the store gets discounted. The way some items are rounded makes it so it doesn't work out to be exactly the discount which might be the source of your confusion.
