In reality, Catherine is the one who is supposed to die because her cortex chip gets overloaded with extreme emotion causing problems. (for a bigger robot, like Simon, it's less of a problem). It may be possible Sarah Lindwall will be able to fix the cortex chip but generally unlikely, it probably sustained severe water damage - though judging by the WAU's slow death if you killed it or normal existence if you didn't, there's no reason you shouldn't be able to try to use structure gel found in the facility to fix it just like you did for some chip at Omicron.
For the climber (the lift you mentioned), it is claimed it can only be operated from Omicron, so ascending wouldn't be possible unless Simon2 woke up and activated it somehow. - "The Climber extends 4019m from Omicron into the Omega Sector. It cannot be operated from there, requiring a scheduled arrival or departure from Omicron.". Though it may be possible to climb the rig of the climber manually all the way up to Omicron slowly.
For all of the later points you made, they are possible. It is kind of nice thinking of SOMA which such a nice ending haha.
