What do seals do in this game?

If I seal a skill, it disables the ability to choose it. Then the skill appears the next time I pick that class or god. What’s the purpose of seals?

You kinda answered your own question. The purpose of a seal is to guarantee that the sealed skill is offered the next time you pick the same God. Let's say you are offered 2 skills/abilities that you want for your build then you would pick one and seal the other.

yeah say i want full thor build and 2 thor autocast skills come up that i like. i seal one, and accept the other one. next level is guaranteed that thor will be an option, and if i choose thor on that level up then it's guaranteed the sealed autocast skill will be an option. this way, i can quickly close out my autocast skills so that my secondary gods (IE odin and freya) won't keep offering their autocast skills and will just give me their passives for any levels where thor isn't an option.

Lol so seal actually means reserve for later. What a bad word to convey that !
Seal, as in Japanese sealing technique, usually means = never use this again for 100 years.
