Welcome to the community! Exctractors only work if you're placing them directly on nodes of resources -- coal, obsidian, iron, and so on. Scope out some caves where there's lots of limestone & bedrock and you'll usually start to see nodes here & there. Mountains and cliffs with lots of exposed stone are also good sources.
Wander mountain tops and - if you're feeling brave enough - explore some caves.
I'm not a fan of caves, personally, but my coal problems disappeared once I realized that there's coal all over the place on the top/side of mountains.
