Another option is to explore caves, coal is found on the stone level. Just be careful, caves house night critters even at day.

If you do not want to use bombs just keep jumping in any holes/caves you see and you will see coal in the first layer in most of them. When you see a piece just dig around it to find the other pieces connected to it. The good part of this tactic is you get lots of stone and you also seem to find lots of Obsidian ore also. If you have not tried bombs yet try some red or yellow beginners tnt that removes the top layers and you will find your coal easy that way also. Let me know if you need more help. I am new but found easy ways to find items so far.
As you need leather for armor I typically find hunting for chests during the night in a woodlands biome the best bet. Those baby night mobs are easy prey and a good source of leather (Don't judge me).
