1. look deep in caves
2. Carve out a large area in the corruption layer and you will find it in chests at a regular basis
3. Tunnel horizonally in the lava and Stalactite levels.
I do all three now and then and have a large stock pile of iron along with a number of other goodies.
I just found and Iron treasure chest with 20 iron ores a while ago while at the lava layer.

it's not just me who cabt find iron nodes there are also 2 friends of mine on the same map.
As for your suggestion to increase iron rate, it is not that simple since worlds are not randomly generated. It is not possible to just "raise the iron spawn rate". However, the devs are aware of this particular topic as it is often discussed. One of the suggestion I read about was that it could be recolored so as to stand out better (as it is, the red brownish color can be hard to spot against the chocolate brown of stalactite... especialy with poor lighting conditions).
I already have gas lamps, and grand arch lanterns, so there is not a poor lighting.
If you're worried about me damaging your world, just make me a visitor (but know I'll be useless in a fight) and ban me afterward.
