Feel like the boars in the fort throw you around alot and barely give any time to counter attack
Am I missing something or do they boars and late game enemies in general just not give you much time to rest, feels like I'm constantly blocking, dashing away and by the time I turn to attack, they're already charging and I have to either eat the hit to do some damage and hope I don't get interrupted or block again and hope they give me more time next attack? (Even then parrying and blocking multiple enemies can be a pain with weird attack timings) Is this just a single player issue like is this more balanced for multiplayer, or maybe playing solo mystic the issue? I'm at a loss but might just be me needing to learn something, I dunno.

Use Spectral Powder if you're playing single player. Run faster or more agile weapons (bow is an obvious choice, but you have a lot of options to choose from). Slot in Adrenaline and carry stamstars to replenish stamina so you can block for longer. Use Blink to create distance and control when the boars attack you. Parry.
Parry then use nova to re-create a gap between you and the boars. Focus rageboars and boomboars that are charging focus shot above all in battle.
The boars are strong creatures, but their predictability makes them easy to deal with. Just don't let them stack up on you and you'll be fine.
As Mystic: Keep them stunlocked with Fluxspear and Nova
As Fighter: use the skill that causes damage to enemies on parry, then let them self-delete on your guard
As Bandit: Use stun from Payday to get distance, leave caltrops to chip them down, lure them into bomb when they try to charge you, stay in the air to avoid attacks as much as possible
if you cant handle pressure be more aggressive
Someone thought it was a good idea to remove hit stun states when you hit enemies so Atlyss became Kitelyss.
Which boar? You talking about the spinny one? Or just like the 2nd tier boar with the blood on it's spear head?
You wanna just dash away from them then attack, if you're close range then just back out then charge up your attacks or get your skills ready and then strike then dash back past them. With mystic or bandit you oftentimes can just kite them and hit them with spells and dash away when you need. Don't forget to use stun skills, nova is the dedicated tool for mystic to just get everything around you off your back.
They have sound cues, they start grunting? Block and that should result in a parry.
Even easier as a fighter 'cause of their passive.
Late game becomes ultrakill 💔
