(I know you said you tend to build defensively and you were looking for something different, but...) I've never made a good melee resist/dodge/parry tank out of him. Instead, I max out absorption as much as possible. If you're in a bad situation and need damage mitigation, you can hit him with Winter's Chill (reduces damage and hit chance against him by ALL enemies by 20% each), plus Ignore Pain and Guard Stance for a combined 20% bonus. Add in the armor and helmet, and you're taking a net 5% of damage (and an extra 20% of melee attacks miss you as a bonus) without counting armor penetration or crits.
If he smacks someone with his axe that turn, his crit resistance jumps from a not-god-awful 15% to 25%, which should be pretty safe from AI opponents.
I gave him Adrenaline Rush so he can open with Crush the Weak if he's going full melee damage that round. That gives him two normal swipes at a max 38% chance to crit, which isn't bad. Plus, since it's a debuff, dedicated crit builds will have a good chance against that target this turn (or the next one, as your WP will probably be going last thanks to his awful initiative).
Ulric's Gift is a great support spell for your melee DPS characters. If you have two wolf priests, you can stack mastery and basic for a combined 30% damage/chance to hit bonus. Personally, I like to pair him with a Captain's Order Smuggler instead, for a net 50% bonus . Works great on my FrenzyDevil Ogre (net 205% damage bonus).
If you have a good opportunity—preferably right before you're about to close with the enemy—you can pop Blessing of Ulric on a big blob of your warband. It lasts for two turns, and adds 10% to crit chance and 20% to crit damage (melee only, sadly; I had a vision of using him on my Musket Line, but 'twas not to be).
In short, I use him as a support caster when appropriate (Winter's Chill has saved more than one of my more fragile units, for example), and an immovable object when I feel like it. I chucked him at a Chaos Spawn once. The poor AI was desperately trying to kill him, but didn't have any armor bypass on it. It was hitting my WP for 5-10 damage per swing once he was fully loaded, and that was after Frenzy was added.
The downside is what happens when he gets critted. It'll happen eventually. When it does, all of that beautiful armor absorption is meaningless (though I do think Winter's Chill still applies—can someone confirm that? It doesn't add to AA, it mitigates damage, so it might still reduce it by 20%). Anyway, He got critted by a lucky Vital Strike even though Northern Tenacity had popped once that turn, and got nailed for 100ish damage, then failed his stun check, and started getting worn down as the AI dogpiled on him (they really like to swarm stunned characters).
Anywho, I like this build a whole lot. Very survivable, and able to dish out great buffs consistently (thanks to Ulric's Chosen, which I think should've been left out; a passive 10% casting chance?!?!) Stick some -Divine Wrath runes on him, and you're golden; you can guarantee at least one single-target buff per round, two or three if you're willing to take a risk or two.
Not going to use the Character Planner for these two, since they are more about the Spells:
1: Make Executioner a Slaughterhouse:
Preferrably two Wolfies, alternating the Basic and Mastery versions of these Spells: Gift, Blessing and Chill. Stacking the Crit-enhancements on an Executioner means that he soloes whole Warbands, and stacking Chill means that he won´t get punished for that.
2: Make Warband go Waaaagh!:
Have Warband at slightly lower Initiative than the Wolfies, Stack Howl of the Wolf, Blessing of Ulric and Active Skill: Alpha Howl on as much of your Warband as you can manage, And Gift tot the most important ones.
Your Warband now has 1OP Charges with +6 range and immense Crit boost. They have turned into Orcs.
As for, per your post, some actual aggressive Builds, here are some:

I didn´t use all the Sts, because not relevant apart from Martials

One may drop Combat Focus Mastery for Addrenaline Rush Mastery. Hitting with Weapon Skill 10 will be hard, however.

You thought that you had Critical Resistance? You won´t have, not even on that Impressive of yours. Unless it is a Melee Resist Maiden, then these two won´t stand a chance.
-45 Critical Resistance is neat.
For any solo Builds, I would have to think about those.
I'm not really willing to test it and find out.

I had almost the same with few changes like Righteous Fury mastered instead of Strong Blow and Insult instead of Exhaustion.
It works quite well.
I'm trying since ages to make a crit build with one but they become very very squishy then and I'm not satisfied with it yet.
No, Halberd does not count as a "Great Weapon"
