As for crit avoiding one might consider increasing toughness, set up appropriate perks for passive increasing crit resistance or some stances that help to avoid it or even damage itself. Also runes may be helpful where applicable though i'm not sure if there are ones that negating crits.

Toughness and some skills increase your crit resistance. Some marks/runes in weapons and shields increase crit resistance also. Elven wine also increases crit resist for a short time.
When boosting your crit resist, scroll through opponents stats and see their crit hit chance. Use the information to your advantage when choosing who attacks what.
Alternatively, you can use skills and helmets to improve stun resistance and use poultice or skills to take away the open wounds recieved from a crit. You can have 100% stun resistance so you can avoid the worst part of crits. It is less efficient (especially since crits bypass armour) but can use less skill slots.
And, for Destruction, the Doomie also has a heal-for-attacks Idol of Blood. And Sisters have a crapton, as said above.
Other than those, no Healing beyond Potions.
I find resilient a must take skill on any melee units. Undead have Body Reconstruction which is a cheaper version. Between the 9 Toughness to unlock resilient and the skill itself, 19 Crit Resist should be enough to avoid most AI Crit chances.
Crits are the quickest way to lose a unit vs the AI, so it is VERY important.
