What is the VTOL key for Hydra?

I think the update changed it, it's not E anymore.

hold g on keyboard or hold left stick key
the game should also tell you which key is necessary for vtol when you enter the vehicle

There's also controls under the options menu, check those, might help you.

Isn't G used for landing gear up/down in general? Why would the Hydra map to that?

It's press G for landing gear, Hold G for VTOl. But yeah, I can see your point that if you don't hold it too long, it will be landing gear, but if your hold it it will be VTOL. You can always change the layout.
