You can do stoppies and you can do wheelies, riding on the front wheel and the rear wheel respectively. Left Ctrl shifts weight back so you can attempt wheelies, while left shift will help you do stoppies.

On GTA IV you used to be able to do Endos but i have not been able to so far in 5.

The wheelie got nerfed hard in this game compared to previous GTAs, and the stoppie even harder. Even 4, which had the most "realistic" physics and where vehicles tended to do the least amount of rolling/spinning/going airborne, had some insane wheelies. In 5, they've upped the insane factor in general of how vehicles behave, but for whatever reason riding on one wheel is where they put their foot down and said, no, that's just too ridiculous. The most bodacious wheelies I've been able to pull have been on the Faggio, which is probably going to be censored in this post--the Vespa looking scooter--and it's probably the slowest motor vehicle in the whole game. It shows a max of maybe 35 mph on the speedometer (however accurate they are in the game; I'm guessing not very) unless you are going downhill.
