Because that's the symbol on most keyboards, which directly derives from old mechanical typewriters, where you literally shifted the whole drum upwards, so the uppercase type on the lever could hit the paper.

Computer keyboards rarely have "shift" printed on them, especially backlit ones.

I realize this is 4 years later, but I have owned a computer for 25 years and all of them, except maybe one laptop has had "shift" printed on the keys. lol
