how do i do this?

When you create a character online you can unlock certain parents to help determine character apperance.

A few of these include; John Marston, Niko Bellic, Claude from GTA III, Misty from GTA III and a few others.

Edit: As for director mode, that's a good question if it wasn't just notifying you of the parental selection.
