It starts at about 3G for me then over the space of 30m it reaches 8G+

I almost think this is true. It happens often in forums. If anyone has 4-6... or even a TOTAL of 8 gb RAM while playing this game, they aren't going to want to turn anything up... most likely, not even half-way in settings. Especially @ 1080p. I dunno if people understand how much tesselation there is in this game, nevermind the sheer size of the world & how this game is improved beyond its next-gen console counterparts... those of which, have better specs than a lot of 'puter users and the game still didn't run super-fast, especially without all the detail we can enable and push.
Happens on any settings.
Here's how to check it for yourself (for all the naysayers) - Load into GTA V MP or SP and tab out once you've loaded in . Then, if you're on windows 8 (7 too I believe), open your task manager, click performance tab (click on show more details if you can't find the performance tab), and click Resource Monitor at the bottom.
Once there, click the memory tab. Locate GTAV.exe and make a mental note of the value it says under the "Commit" column for GTAV. If you'd like to know what the commit column signfiies, simply mouse over it and a tooltip will pop up. Play the game actively for about half an hour or so (driving, flying, doing lots of loading), tab out, and look at that commit value again. Chances are it will have DOUBLED if not TRIPLED in its value, and you can actually sit there and watch it tick upwards slowly while alt-tabbed out. That gradual ticking upwards is the process (in this case GTAV.exe) eating away and engorging your system paging file with trash data.
The working set column is the amount of your physical RAM (non-paging file) that the game is actually using at the moment - also interesting to note. Usally doesn't go above 2.5 GB at 1080p max settings - the problem doesn't lie in lack of RAM.
The initial values you'll have in the column will vary based on your in-game settings, as well as the max value you've set for your page file.
We can only hope R* cares enough to track down and address the issue (yet somehow i'm doubtful). This needs all the attention it can get.
I have a pending Rockstar ticket confirming that the frequent crashes and overloading vRAM is indeed a memory leak.
No need to jump into threads that you don't have valuable input for and start calling people "kids". That helps no one.
To your point, I have tried all of the "fixes" and "workarounds". Rockstar support sent me "solution" after solution to trying resolve it from my end, with no success. I suppose I can let y'all know if and when I get it resolved. I imagine it will have to be a large scale patch.
