Does anyone know how or where I can find out my serial number for GTA5 on Steam?

There is none. You get the social club key if you buy externally. And you dont need a steam key if you have it on steam

Actually you would have to be given a steam key, because on social club it gives you an option to "Activate GTA V PC" on your account. I guess 'Rockstar Keys' will be given out closer to the date so you can register your game on Social Club and be a part of the community there.

If you purchased the game from Steam:

Click the “PRE-LOAD” button in the Steam client (Library->Grand Theft Auto V) and begin downloading the game. Your Rockstar Activation Code will automatically be entered and used when you launch the game for the first time, so you do not need to enter it manually anywhere. Your game download will become playable on April 14, 2015. If you encounter any issues with your Steam pre-load or activation code, please contact Steam Support.
