Way too hard NPC enemies

Anyone else struggling with this? As soon as a hostile NPC sees me he starts shooting me with 100% aim. Now this is ok by itself, but they also shoot at their 100% range!
Other times I have a hard time to spot them, while they already shoot me... they really are hard to see depending on the spot you are, crazy.

I just died trying to get that car full of copper to its location, for that Acid Lab. Enemies started to spawn in cars, I outmaneuvered them and drove fast but they could from super far away still hit my car forcing me to kill them.

How do you guys deal with those NPCs? They feel to me like when I set Unreal Tournament 2004 Bots to "Godlike" so they see me through walls and shoot as soon as I come around a corner.

It doesn't matter if they hit a car in that mission. Just keep driving.
