Then, start with detailing 'where' it crashes. Sirens? Loading story? Online? Close background programs (including wallpaper engine, discord, etc), things with overlays, and try again. If necessary try to run the gta5.exe by itself to see if it tells you a file is missing (useful), or if it says to run in launcher/from steam (normal behavior).
Then, we could look into corrupt saves, directx or vcredist issues, launcher/social club issues, possibly onedrive interfering, gpu driver issues, av/security, battleye, cloudsaves, and.. many other potentials. The launcher.log in my docs / rockstar games / launcher 'might' even give more useful info/error codes.

This is also a common problem when running R* launcher or steam in windows 7/8 compatibility mode. I'd go doublecheck none of those are set as. Make sure to restart them if they were. Knowing R* - I'd likely expand that to check all .exe for R* launcher, and in the gta5 enhanced folder too - just to be safe (and because I'm too lazy to go test each one).
