If you're using a mod manager, it should be able to remove everything cleanly. If you're not... well, good luck.
I dont get the idea of mod managers. i have mods like LSPDFR, GTAluaScripts and modified rpf files. mod managers only manage script mods last time I checked
Maybe you shouldn't be modding if there isn't a decent mod manager available?
The most basic type of mod manager puts things in the game's files and remembers where they are so they can be managed, modified, and removed if necessary. Anything less than that probably isn't worth using.

Backup the files in the main GTA V directory, then delete all the files in the GTA V directory other than the folders, then run the verify, and it will download those files for you.
If it doesn't, then you can always restore them.
