of course if you go into a jump on a slight angle the momentum is going to turn you accordingly to the angle you're in, the speed and the weight of the car.
go into the jump in a straight line and use my previous stated comment "same directional buttons as steering/moving to turn"
if the car doesn't turn left or right as you want it to then obviously buy a car intended for stunts

a coil brawler is good for jumps as far as car types.
probably most off-road high speed vehicles is want you want to buy

It doesn't matter what vehicle you use, there is nothing even slightly realistic about the physics in GTA V.
